I love soup do you? Like really love it….
If I’m away form home travelling – it’s what I crave and miss the most.
The good thing about soup is it can also be super healthy (with a few tweaks) and so filling and warming too.
Packed full of lovely vegetables mostly, which really helps with the vitamins, minerals and fibre we all strive for
All of these are vegetable based – I haven’t included any with meat as I really want to focus on the fibre
Easy Slimming Soup Lunches are my saviour
I tend to make big batches or soup and freeze in individual portions. That way I can grab one in the morning and it’s a lovely filling, warming soup at my desk.
I get really fed up with sandwiches etc – so this is my definite go to…
So here we go – Six Easy Slimming Soups
Here’s my collection of soups for when you’re trying to be a little more healthy 🙂 or just want a big bowl of something delicious to warm you up – like a mashoooosive hug
Cals Per Serving -> 176 Cals
Lets start with an Italian classic!
This non creamy tomato based soup with tonnes of veggies is a super winter warmer. Perfect for a lunch with bread or crackers or simply on its own
Cals Per Serving -> 172 Cals
Again a non creamy soup. I love this one too.
All the veggies are roasted on a baking tray/ sheet pan then blended with stock and ta-dah!
It’s sweet, garlicky and packed with flavour – love it.
It’s like the roasting of all the vegetables intensifies the flavours

This is my go too when I have loads of vegetables in there fridge and I need to use them up
And also when I feel a little under the weather – strange isn’t it, that I crave this one

This one I tend to make after Christmas. Think it’s usually as I have parsnips and carrots left over. Super simple but very delicious
I love parsnips in soup – such a distinct and wintery flavour

Another vegetable packed soup. Slightly lighter in terms of veggies and a little pasta added to make it more of a yummy meal

Can you freeze soup?
Yes yes yes you can 🙂
I freeze mine in small plastic trays that I recycle time and time again
I tend to use within 3 months of freezing to ensure they are at their best
How long will my soup keep in the fridge?
Store in an airtight container in the fridge for 2-3 days
And reheat until piping hot, in a saucepan or in the microwave
