It’s certainly Brrrr Winter…..

What we need is Alexia’s Nourishing Spicy Soup!

It’s so flipping cold outside and I don’t know about you but I’m a massive believer in filling myself with warm food, food to nourish and make you feel goooood!

Well I think this fits the bill perfectly

So here is my lovely friend Alexia – how stunning is she?!

A beaut inside and out!  (more about that in a moment) and she’s such a strong and sassy lady too!

So here is a little something  Alexia threw together for lunch:

Using some broccoli, potato and courgettes, with added spice and heat and finished with fresh coriander, Greek yogurt and a sprinkling of green chillies – certainly spicy and luxurious comfort on a freezing cold day!

We decided to call it Alexia’s Nourishing Spicy Soup as it’s so tasty and nourishing for body and soul!

So flipping good for you!

Broccoli, potatoes, Courgettes, garlic, green Chilli and and loads of other stuff too! It’s a treat I promise and so Easypeasylemonsqueezy!

So how beautiful is Alexia??

  • 400g Potatoes, peeled and chopped
  • 200g Broccoli, broken into florets
  • 300g Courgettes, (2 medium) sliced
  • 1-2  tablespoons Olive Oil / Fry Light
  • 2 Shallots / or 1 large Onion, peeled and finely chopped
  • 2 Cloves Garlic, peeled and finely chopped
  • 1 Tablespoon Green Pesto
  • 1 Vegetable Stock cube made up to a pint, with boiling water
  • Chopped Green chillies – as little or many as you can take!  (I chopped 1/2 a chilli as I’m a wozz) Saving a few bits for garnish
  • Salt and Freshly Ground Black Pepper to taste

Preparation Method

Serves 4

  1.  Pop the peeled and chopped potatoes into a steamer with water and bring to the boil – after 5 minutes pop the broccoli and courgettes in the steamer and steam for 10 minutes or until soft on top of the potatoes
  2.  In the meantime, gently fry in a frying pan with the Olive Oil the shallots and garlic until soft
  3. Once the potatoes are soft, drain and return to pan, tipping the broccoli and courgettes in onto too.
  4. Next tip in the onion, garlic and oil mix,  on top and mash with a fork
  5. Then add the pesto and a few chopped Green Chillies and mix
  6. Next pour over the vegetable stock and blitz with a hand blender until smooth
  7. Have a taste and adjust seasoning with salt and freshly ground Black pepper to taste
  8. Heat and serve with Greek Yogurt, fresh coriander and a sprinkling of chilli!

It’ll keep the cold at bay I promise!
