One Bowl Apple Cake

I’ve had this recipe on my list of recipes for a very long time! There is nothing easier and more delicious than my simple One Bowl Apple Cake, so here it is finally. (And it’s round not loaf shaped – that’s really not like me is it 🙂 ) 

Soft delicious buttery cake with the sweetness of chopped apples studded throughout. It’s so very moist and can be eaten warm as a pudding or cold with a nice cuppa 

When you have fallen apples – make this, it’s so so good.

One Bowl Apple Cake – so easy 

You literally make this cake in one bowl!

By hand, using a hand mixer or stand mixer 

It’s so simple – get the kids making it 

 

Ingredients for your One Bowl Apple Cake 

 

Apple Cake Ingredients

  • Butter

I use unsalted butter, salted would also be ok. As would baking margarine. I just love using butter in my bakes. This apple cake has a lovely buttery flavour – delicious!

  • Caster Sugar 

Perfect for this cake and many more, finer than granulated 

  • Eggs 

3 large Eggs for this recipe (I also use free-range – my preference) 

  • Plain Flour & Baking Powder 

Helps to lift your loaf cake to the perfect shape together with the additional baking Powder added. This cake has the perfect crumb structure, so soft and very moist 

  • Vanilla Bean Paste 

I love vanilla bean paste as it’s so natural, you can of course use vanilla extract 

  • Apples  

Any dessert apples will do. We use 3 in this recipes, peeled, cored and chopped into 1.5cm pieces 

  • Light Golden Caster Sugar 

You can use any brown sugar here but this light golden caster add a really nice flavour and colour to the top 

 

How to make your Apple Cake 

***See full recipe card at the bottom of this post*** 

Step 1 

Cream your butter and caster sugar until light and smooth 

Next add one egg at a time beating well between each addition 

Add your flour and baking powder and vanilla bean paste and mix until combined 

Step 2 

Add your peeled, cored and cubed apples

Step 3 

Tip into your greased (and lined – I didn’t but you may want to)  spring form tin and pop that on a baking tray 

Step 4

Spread to the edges with a spoon 

Step 5 

Next sprinkle your brown sugar on top and bake in the centre of your preheated oven for approx 45 minutes

Until your cake is firm to the touch and golden brown (or you can stick a skewer in and if it comes out clean it’s baked) 

So golden

Leave to cool in the tin, sprinkle with icing sugar and serve 

Top Tips for your apple cake 

  • Peel, core and chop your apples after you’ve mixed your batter. You don’t want brown apples 
  • Place a baking tray under the tin – you don’t want any spillages on the bottom of your oven 
  • I didn’t but I suggest lining your tin as well as greasing with butter 
  • Add a teaspoon of cinnamon – if that’s your thing?

Serving suggestions for your apple cake

This cake has a nice dense texture, perfect to have warm with cream, custard or ice-cream (made both?)

And equally as good cold with a brew!

This lovely cake is sturdy enough for a lunch box too!

It’s very very moist due to the amount of apples in there! 

It’s delicious but not too ‘fancy.’ Do you know what I mean?

A good basic – enjoy 

How to store your apple cake 

Please remember this cake is very moist and may go a little soft the next day – but it’s equally as delicious. You can also warm through again if you’d like 

This cake will keep in a tin for 3 days (if it lasts that long 

Can I freeze my one bowl apple cake 

Yes you can. What I do is cut into wedges and wrap individually in cling film or foil and freeze – good for a couple of months 

When you want your slices leave it thaw at room temperature

So any dessert apples will do,  but the Pink Lady ones are lovely, but as I said any will work perfectly!

I love apples especially in cakes!

There’s something so fresh and delicious about apples that are baked!

A delicious soft and buttery one bowl apple cake, stuffed with sweet apple chunks! So easy

Equipment

  • 9 inch / 23 cm spring form tin

Ingredients

  • 200 g Caster Sugar
  • 200 g Butter, softened Salted or unsalted
  • 3 Large Eggs Free Range
  • 200 g Plain Flour
  • 1 teasp Baking Powder
  • 1 teasp Vanilla Bean Extract or vanilla extract
  • 3 Dessert apples Peeled, cored & chopped - but right before you need them
  • 2 tbsp Golden caster Sugar
  • 1 tbsp Icing Sugar Optional

Instructions

  • Preheat your oven to 180C (fan) 200C / 400F / gas 6
  • Grease and line you spring form tin with butter
  • In a stand mixer or with a hand whisk or by hand in a bowl, cream your butter and caster sugar until light and airy
  • Next add one egg at a time and beat well after each addition (if it looks like it's curdling add a tablespoon of your flour)
  • Add your flour, vanilla bean extract and baking powder and mix well until you have a smooth batter
  • When your batter is made, peel, core and chop your dessert apples into approx 1.5cm cubes
  • Add to your batter and mix well
  • Tip this batter into your prepared tin, smooth to the edges with a spoon and sprinkle over the golden caster sugar
  • Pop your tin on a baking tray and bake in the centre of your pre-heated oven for approx 45 minutes. Your cake should be firm to touch, golden brown and it you prod with a tooth pic it should come out clean
  • Leave in the tin to cool slightly and then remove
  • Dust with icing sugar and serve!
