A delicious soft and buttery one bowl apple cake, stuffed with sweet apple chunks! So easy
Equipment
9 inch / 23 cm spring form tin
Ingredients
200gCaster Sugar
200g Butter, softened Salted or unsalted
3Large Eggs Free Range
200gPlain Flour
1teaspBaking Powder
1 teaspVanilla Bean Extract or vanilla extract
3Dessert apples Peeled, cored & chopped - but right before you need them
2tbsp Golden caster Sugar
1tbsp Icing Sugar Optional
Instructions
Preheat your oven to 180C (fan) 200C / 400F / gas 6
Grease and line you spring form tin with butter
In a stand mixer or with a hand whisk or by hand in a bowl, cream your butter and caster sugar until light and airy
Next add one egg at a time and beat well after each addition (if it looks like it's curdling add a tablespoon of your flour)
Add your flour, vanilla bean extract and baking powder and mix well until you have a smooth batter
When your batter is made, peel, core and chop your dessert apples into approx 1.5cm cubes
Add to your batter and mix well
Tip this batter into your prepared tin, smooth to the edges with a spoon and sprinkle over the golden caster sugar
Pop your tin on a baking tray and bake in the centre of your pre-heated oven for approx 45 minutes. Your cake should be firm to touch, golden brown and it you prod with a tooth pic it should come out clean
Leave in the tin to cool slightly and then remove
Dust with icing sugar and serve!
