
Eve’s pudding – so easy!
I realised I hadn’t published my recipe for one of my favourite basic puddings, Eve’s pudding. I guess it’s like an apple sponge pudding basically
Do you remember it?
Lovely apples topped with a vanilla sponge, it’s delightful and a real change from apple crumble! A real comfort pudding 🙂
So why is it called Eve’s pudding?
I did a bit of research and found that the internet suggests:
It’s a traditional British dessert featuring stewed apples, often referencing the forbidden fruit in the biblical story of Adam & Eve
The pudding is typically topped with a simple vanilla sponge, often a Victoria sponge, and the apples are often a specific eating apple variety also called Eve.
The name also connects to the original “Mother Eve’s Pudding
Ingredients for your Eves Pudding

Bramley Apples
I used Bramley apples as they are perfect for this. I prefer cooking apples in my Eves Pudding as it adds a nice tartness to this comfort pudding

Lemon Juice
Helps to stop your apples going brown and adds an added freshness

Butter
Salted or unsalted, doesn’t matter. I always use butter in my bakes. In my opinion it’s the best! Leave at room temperature to soften

Golden Caster Sugar
Perfect for this cake and many more, finer than granulated and the golden just adds an extra flavour. Although white caster sugar is also fine

Eggs
3 Medium Eggs for this recipe (I also use free-range – my preference)

Self Raising Flour
Helps to lift your sponge to the perfect bake. This cake has the perfect crumb structure
How to make your Eve’s Pudding

Step 1 – Prepare your stewed apples for your Eve’s pudding
Grab a large pan and add your apples & lemon juice , stir over a low heat for 5 minutes until they start to soften
Step 2
Add your butter and Golden caster sugar and stir over the heat until melted
Step 3
Tip your stewed apple mix into your pudding tray
Step 4 – make your cake batter for your Eve’s pudding
Make your sponge batter, by creaming your butter and sugar until light and fluffy
Next add one egg at a time and beat well
Add your self-raising flour and mix until smooth
Step 5
Pop your batter over the top of the apple mix and smooth the top
Step 6
Now bake in the centre of your pre-heated oven until your Eve’s pudding is firm to the touch and golden
Serve
Just look at it!
Serving suggestions for your Eve’s pudding
This Eve’s pudding is perfect to have warm with cream, custard or ice-cream (made both?)
It’s delicious but not too ‘fancy.’ Do you know what I mean?

How to store your Eve’s pudding
Seriously I’m not sure you’ll have any left
But if you do you can store for a couple of days in the fridge and warm up before serving (I normally do this is the microwave
Can I freeze Eve’s Pudding
Yes you can. Bake and freeze – cover well
When you want your Eve’s pudding leave it to thaw at room temperature and heat accordingly
So go on have a go at this lovely comforting Eve’s pudding

Easy Eve's Pudding
Ingredients
- 3-4 Bramley Apples Peeled, cored and chopped into large chunks
- 1 Juice of Lemon
- 1 tbsp Water
- 25 g Butter Softened
- 25 g Golden Caster Sugar or white caster sugar
- 125 g Butter Softened
- 150 g Golden Caster Sugar or white caster sugar
- 150 g Self-Raising Flour
- 3 Eggs Medium & Free Range
Instructions
- Pre heat your oven to 180C / 160C fan / Gas 4
- Peel, core and roughly chop your Bramley apples into large chucks. Pop then in a large pan with your lemon juice and 1 tablespoon of water and cook over a low heat for 5 minutes, until they start to soften slightly
- Next add the 25g butter & 25g Golden caster sugar and stir until melted
- Transfer your apple mix to to a shallow rectangle pudding dish - one that is about 1 litre capacity (1.5 llbs) and no less than 5cm deep - I use an enamelled tin one
- Next for the topping, cream together your softened butter & sugar until light and fluffy
- Add one egg at a time and beat (if it curdles add a little of your flour)
- Finally stir in your self-raising flour until smooth, do not over beat else you'll loose the air
- Spoon this cake batter over the top of your stewed apple mix and smooth the top with a spoon
- Bake in your preheated oven for 35-40 minutes. Please check after 30 minutes. Your Eve's pudding should be firm to the touch and golden brown
- Remove from the oven and serve with cream, custard, ice cream or all three
