Ingredients
3-4Bramley Apples Peeled, cored and chopped into large chunks
1Juice of Lemon
1tbsp Water
25gButterSoftened
25gGolden Caster Sugar or white caster sugar
125gButter Softened
150gGolden Caster Sugar or white caster sugar
150gSelf-Raising Flour
3Eggs Medium & Free Range
Instructions
Pre heat your oven to 180C / 160C fan / Gas 4
Peel, core and roughly chop your Bramley apples into large chucks. Pop then in a large pan with your lemon juice and 1 tablespoon of water and cook over a low heat for 5 minutes, until they start to soften slightly
Next add the 25g butter & 25g Golden caster sugar and stir until melted
Transfer your apple mix to to a shallow rectangle pudding dish - one that is about 1 litre capacity (1.5 llbs) and no less than 5cm deep - I use an enamelled tin one
Next for the topping, cream together your softened butter & sugar until light and fluffy
Add one egg at a time and beat (if it curdles add a little of your flour)
Finally stir in your self-raising flour until smooth, do not over beat else you'll loose the air
Spoon this cake batter over the top of your stewed apple mix and smooth the top with a spoon
Bake in your preheated oven for 35-40 minutes. Please check after 30 minutes. Your Eve's pudding should be firm to the touch and golden brown
Remove from the oven and serve with cream, custard, ice cream or all three
