I thought I’d show you how I cook delicious carrots. They can be rainbow carrots of just bog standard orange carrots

Cooking them in foil in the oven seems to intensify the flavours and obviously it save energy and time using the heat from the oven – winning! And no pan to wash 🙂 Always a bonus 

 

What are Rainbow Carrots?

Rainbow carrots are a mix of colourful carrot varieties
 
Typically they are yellow, orange, white, red and purple
 
I do now there are other colours too but I have never tried those 
 

Do Rainbow carrots taste nice? 

Oh yes they do 🙂 

They all taste carroty if you see what I mean, however some are mild, yellow ones and the purple ones are so sweet – they are my favourite 🙂 Earthy and delicious

You can get all sorts of colours and I think they look very appealing and offer some variety when you serve with your meal 

Have you tried to grow carrots? I haven’t but I’m now thinking about maybe having a go?  

 

Can I use Orange carrots? 

Yes of course you can.

They are also very good baked like this in the oven.

It intensifies the flavour – yum!

 

Cooking En papillote 

The French term en papillote translates as ‘in parchment’, which literally describing the cooking method I use here

It means cooking your vegetables (and it’s great for fish too) in a pouch of paper or foil. For veggies I recommend foil

You literally steam the veggies in the oven in their own moisture 

You can add many things if you like. I use a little oil, salt and black pepper 

 

But you can add what you like really

  • Fresh herbs or dried 
  • Chilli flakes or fresh 
  • Lemon zest & juice 
  • Orange zest or juice 

Whatever you fancy! 

I think the carrots sign for themselves, so I only add oil a touch of Salt & black pepper 

 

Step – by -step

How to cook your rainbow carrots 

Step 1 – prepare your carrots 

It’s very important you trim and slice your carrots equally, I like mine chunky, but the important thing is to try and get them all the same’ish (so they cook in the same time) 

 

Step 2 – Grab your foil 

Firstly grab your baking sheet and a roll of foil 

Take a large piece of foil – almost twice your baking tray length 

Pop the foil on the baking sheet and place your carrots on the top – trying to get a one layer (almost) 

Add a drizzle of olive oil and season

Step 3 – make your foil pouch 

Fold over the foil and turn over the edges making a large foil pouch with your carrots inside

Step 4 – bake your rainbow carrots! 

When  you are ready pop the baking sheet with the foil pouch on top into a heated oven and bake for approx 30 minutes 

When you are ready to serve, carefully open the pouch (WATCH THE STEANM IT’S HOT) and slide into your serving dish 

Pop a knob off butter on top and voila!!

A delicious step by step to the perfect oven baked Rainbow Carrots

Equipment

  • Baking tray
  • Foil

Ingredients

  • 450 g Rainbow Carrots
  • 20 g Olive oil
  • Salt & Black Pepper
  • 10 g butter

Instructions

  • Preheat your oven to 180C Fan / 200C non fan / Gas 6
  • Prepare your carrots (I don't peel, just wash)
  • Trim the tops off your carrots and then slide into chunky slices I half mine lengthways and down the middle
  • Take a large piece of foil and place on your baking tray (twice the length of the baking tray)
  • Pop your prepared carrots on top and make a thin layer

  • Drizzle with olive oil and season
  • Fold over the foil and make a pouch by turning over the edges

  • Once you have a sealed foil pouch on your baking sheet, put that in a preheated oven for approx 30 minutes
  • Once cooked, be very careful and open your pouch (there will be steam - so be careful) and pop in your serving dish
  • If you like add a knob of butter and serve
