Festive Rocky Roads

Ingredients

  • 100 g Dark ‘Real’ Chocolate
  • 50 g Milk Chocolate
  • 75 g Butter
  • 2 tablespoons Golden Syrup
  • 100 g Mini Oreos halved
  • 50 g Digestive biscuits broken
  • 50 g Dried Cranberries
  • 40 g Pistachio Nuts or Brazils if you like
  • 60 g Mini Marshmallows
  • 100 g Glacé Cherries halved
  • Icing sugar for dusting

Instructions

  • Line a 24cm x 24cm tin with greaseproof paper and a little butter.
  • In a large pan melt the Chocolate (both types) butter and golden syrup over a low heat, stirring.
  • Once melted remove from the heat
  • Add Oreos, broken digestives, dried cranberries, Pistachios, marshmallows and Glacé cherries
  • Stir really well until everything is covered in chocolate and tip into the tin, loosely press down
  • Refrigerate for minimum 3 hours
  • Remove from fridge and cut into whatever size pieces you want
  • They are very rich so I suggest small - you can always go back for another.
  • Finally dust with icing sugar
  • Put in an airtight box in the fridge, they will keep for a week if they last that long….
