300gRump steakfat trimmed sliced thinly - approx. 2-3 mm
1Garlic clovepeeled and very finely chopped
Fresh Ginger 2cm piecepeeled and chopped finely
1Yellow Peppercut into matchstick sized pieces
1box shitake Mushroomsroughly chopped (not too small)
Bunch Spring Onions6 - chopped into 1 cm pieces
Salt & Black Pepper - to season
300gChilled udon Noodlesnot dried I used the straight to wok ones
2Tablespoons soy sauce
Half a Lime - squeezed
Hand full of chopped fresh corriander
Instructions
In a wok or large frying pan add the olive oil (or fry lite), when hot add the steak, garlic and ginger, fry off for 3-5 minutes until cooked - not red (but not over cooked).
Pop the beef in a warm place
Then in the same frying pan, add the peppers, spring onions and mushrooms and fry off for 5 minutes until soft- season with salt and Black pepper
Throw in the noodles and fry for a further 3 minutes until hot
Add the beef back to the pan together with the Soy Sauce and lime juice stir and heat for a couple of minutes
Finally throw in the coriander and serve on hot plate
Get tucked in and enjoy
