Mango and Avocado Salad with Black beans

A delicious and refreshing mango, avocado and black bean salad, with a kick of chilli lime and coriander

Ingredients

  • 400 g Black Beans drained and rinsed
  • 1 small mango stoned, peeled and chopped
  • 1 small avocado stoned, peeled and chopped (2 if you like)
  • 200 g cherry tomatoes, red or yellow halved
  • 1/2 red chilli deseeded and chopped
  • 1 red onion, small peeled and chopped
  • 1 Lime zested & juiced
  • ½ pack coriander or a good handful chopped
  • Salt & freshly ground black pepper

Instructions

  • Grab yourself a bowl
  • Pop in your drained black beans
  • Add your chopped mango, chopped avocado, halved cherry tomatoes, chilli, red onion and stir
  • Next add your lime juice, zest and coriander and stir through
  • Season to taste
  • Serve or pop in the fridge until you are ready to serve
