A delicious and refreshing mango, avocado and black bean salad, with a kick of chilli lime and coriander
- 400 g Black Beans drained and rinsed
- 1 small mango stoned, peeled and chopped
- 1 small avocado stoned, peeled and chopped (2 if you like)
- 200 g cherry tomatoes, red or yellow halved
- 1/2 red chilli deseeded and chopped
- 1 red onion, small peeled and chopped
- 1 Lime zested & juiced
- ½ pack coriander or a good handful chopped
- Salt & freshly ground black pepper
Grab yourself a bowl
Pop in your drained black beans
Add your chopped mango, chopped avocado, halved cherry tomatoes, chilli, red onion and stir
Next add your lime juice, zest and coriander and stir through
Season to taste
Serve or pop in the fridge until you are ready to serve
