Delicious soft gnocchi with bacon and mushrooms
- 200 g Gnocchi - chilled from supermarket
- 1 tablespoon Olive Oil
- 1 Clove garlic peeled and finely chopped
- 4 bacon Medallions or 3 slices smoked bacon sliced into thin strips
- 100 g Chestnut Mushrooms sliced
- 250 g Cherry Tomatoes halved
- 50 g Matured Cheddar cubed
- Handful Basil leaves torn
- Salt & Black Pepper
Cook Gnocchi in boiling water as per pack instructions, usually 2 minutes
Drain and leave on on one side
In a large frying pan add the Olive oil, garlic, bacon, mushrooms - fry for apron 5 minutes
Then add the cherry tomatoes and continue to fry for a further approx. 5 minutes
Tip in the gnocchi and heat for a few minutes
Add half the torn basil leaves and place cubes of cheese in between the tomatoes and gnocchi (season if necessary)
Pop under the grill for a few minutes until nice and golden brown
