A delicious cocktail, rum, sweet raspberries and the kick of the ginger ale
- 5 mint leaves + 1 for decoration
- 1 lime - cut in half
- 5 raspberries
- 1 tsp of sugar syrup see Tarty Tom Collins for how to make your own
- 1 tbsp of Chambord or creme de cassis
- 35 ml of white rum like Bacardi
- Splash of Ginger ale
- Ice
Put mint, lime halves & raspberries in a jug and smash up with the end of a rolling pin
Add the sugar syrup, Chambord and rum and stir
Pour into a high ball or large tumbler glass, add some ice, stir and top up with ginger ale
Throw on a mint sprig for a finishing touch
