Makes a load, minimum 12 – can easily be 20, rich but yummy……

  • 180g Oats
  • 80g Rye Flour
  • 150g Light Brown Caster Sugar
  • 1 teaspoon Bicarbonate of soda
  • 100g Dried goji berries – or more if you want
  • 60g Poppy seeds
  • 60g Pumpkin seeds
  • 60g Sunflower seeds
  • 60g Shelled Pistachios
  • 80g Chopped Apricots
  • 50g Dried Cranberries ( or sultanas)
  • 100g Flaked Almonds
  • 280g Runny Honey
  • 60g Maple syrup
  • 100g Butter

Preparation Method

Pre-heat oven 160 C/320F/Gas 3

  1. This is really important: Line and grease WELL a 8cm x 8cm tray/tin/dish
  2. Mix all dry ingredients together in a large bowl
  3. In a pan melt the honey, butter and maple syrup
  4. Pour this melted mix over the dry ingredients and mix really well, it may seem a little dry
  5. Tip into lined and greased tin and press down until level, stand tin on a baking tray
  6. Bake for approx. 30 mins- 35 mins on centre shelf (be VERY careful when you lift it out of oven it may still be bubbling)
  7. Leave to go cold in tin – then remove and cut into bars and wrap in cellophane
  8. Bars will keep for about 2 weeks if wrapped well
  9. Perfect for breakfast on the go, or lunch boxes ….. Enjoy Cx

Trish says:
These are delicious, I used up all sorts of bits I had in the cupboard I did put a lot less sugar in as thought it would’ve too sweet with all that honey too.
