The quickest, easiest, tastiest, most comforting supper – banging! Have you tried Gnocchi before? So here I have developed my Gnocchi with Bacon, Mushrooms & Tomatoes, give it a try!

What is  Gnocchi?

You most probably know,  however just to be sure….

Gnocchi are various thick, small, and soft dough dumplings that may be made from semolina, ordinary wheat flour, egg, cheese, potato, breadcrumbs, cornmeal, or similar ingredients, with or without flavourings of herbs, vegetables, cocoa, or prunes.

Gnocchi hails from Italy, as do lots off lovely things

I sometimes find it a bit pappy – do you know what I mean?

However with my recipe,  Gnocchi with Bacon, Mushrooms & Tomatoes I seem to have cracked it!

It’s perfect supper fodder and works wonders if you have a hangover! Trust me…..

 

Vegetarian Gnocchi 

Leave the bacon out for Vegetarians.

You can add so many other ingredients such as onions, veggies – whatever you like really 

It really is simple and makes a nice alternative to pasta – a change is as good as a rest 🙂

Should you boil gnocchi before frying?

Lots of people ask this question and the simple answer is no. 
 
There really is no need – you can simply just cut the bags of chilled gnocchi and pop in straight into the pan – perfect!

Gnocchi with Bacon, Mushrooms & Tomatoes

Delicious soft gnocchi with bacon and mushrooms

Ingredients

  • 200 g Gnocchi - chilled from supermarket
  • 1 tablespoon Olive Oil
  • 1 Clove garlic peeled and finely chopped
  • 4 bacon Medallions or 3 slices smoked bacon sliced into thin strips
  • 100 g Chestnut Mushrooms sliced
  • 250 g Cherry Tomatoes halved
  • 50 g Matured Cheddar cubed
  • Handful Basil leaves torn
  • Salt & Black Pepper

Instructions

  • Cook Gnocchi in boiling water as per pack instructions, usually 2 minutes
  • Drain and leave on on one side
  • In a large frying pan add the Olive oil, garlic, bacon, mushrooms - fry for apron 5 minutes
  • Then add the cherry tomatoes and continue to fry for a further approx. 5 minutes
  • Tip in the gnocchi and heat for a few minutes
  • Add half the torn basil leaves and place cubes of cheese in between the tomatoes and gnocchi (season if necessary)
  • Pop under the grill for a few minutes until nice and golden brown
