Freda’s apple & fruit loaf

Such a lovely fruit cake, a great one for keeping in that tin! It also helps use up all those fallen apples couldn’t be a more perfect cake, its moist, easy and tasty!

This recipe is very popular – Pinterest loves it?! and I mean LOVES it!  It is a super old fashioned cake and so very very easy to make. I’m sure you’ll make it time and time again! Keeps so well in the cake tin! Oh and try it buttered with a slice of cheese – yes really! I have to thank Freda for Freda’s apple & fruit loaf recipe!

Ingredients

  • 12oz/340g Self Raising Flour
  • 6oz/ 170g Sugar
  • 6oz/170g Butter or margarine
  • 12oz/340g Mixed Dried Fruit (whatever you like)
  • 2-3 tbs Milk
  • 1/2 pt of Softened Apple Pulp

Preparation Method

Apple Pulp

  1. When there’s a glut of apples or the ones that have gone off in the fruit bowl, peel, core and chop.
  2. Place in a heavy bottomed pan with a splash of water, bring to a boil, stir and cover with a lid and turn down heat a little.
  3. Simmer for approx. 20 minutes until soft.
  4. You can do this anytime and pop in the freezer

Pre-heat oven Gas 4 / 180°c

  1. Melt the butter/marge in a large saucepan
  2. Add all the other ingredients and stir well
  3. Pop into a greased and lined large loaf tin and bake for 1h 30 minutes (watch it though)
    Ta Dah – That’s it!!
  4. Slice, butter and enjoy! Especially with a piece of cheese! Yes cheese   Cx

OMG I made this today and it's absolutely amazing, one of the nicest cakes ever, I also made one with gluten free flour but haven't tried that one yet x

Fantastic, it tasted good raw, I can't wait for it to come out of the oven. I added a 1/2 tsp of Christmas Spice Mix. I halved the recipe as I'm the only one who eats fruit cake.

Delicious, I added some cinammon and walnuts and justed grated the apple straight in with the rest of the mixture, suppose I totally changed the method but hey ho!

    I've only used eating apples, but try a tad more sugar in the pulp - I'm sure it would be ok - please et me know Cx

So, I was going to make Kate's apple cake from GBBO but life is too short. This a great tea loaf, so delicious and moist. I hate peeling so I made the apple pulp with skins on and then gave it a quick blend. I really like this sort of recipe: straightforward to make and also uses ingredients that are already in the cupboard. Much higher chance of it actually getting baked. Thanks!

Thanks Freda for this delicious recipe. I chopped and cored an eating apple leaving skin on and microwaved for 2-3 mins.. I also added cinnamon and walnuts as previous readers have done. It keeps well, in fact it`s even better! There was enough mixture to put into two small loaf tins. We think it`s good enough without spreading a slice with butter. Just delicious. Thanks so much Freda!

Great use for all the apples I pulped and froze last autumn. Nice and moist,keeps well if you can leave it alone. Cake also freezes great so I do a double mix
