Easy Tomato & Mozzarella Salad

You know I’ve been trying to decide if this Easy Peasy Tomato & Mozzarella Salad needs to go on here as a recipe?

It is the simplest of recipes and just a construction job really.

However a couple of peeps kindly pointed out to me – that I should, just so you can print it for a shopping list 🙂

‘He-Who-Doesn’t-Cook’ even makes this!!! That’s saying something! And he makes it often… and very well

I also think its a really good dish to have when you want to go meat-free for a day or as a side dish at a BBQ or just a lovely lunch…

 

The Tomatoes for your Easy Tomato & Mozzarella Salad

I love tomatoes, all kinds of tomatoes! 

I like to mix it up with all sorts of varieties, red, yellow, green. Sugar plum, all sorts.

I simply love the blend of the all!! Try it!!

 

Easy Peasy Tomato & Mozzarella Salad

 

Throw in your mozzarella, a big glug of olive oil and handfuls of torn fresh basil and you’re off!  Boom 

 

Also known as Caprese salad

It’s My FAVOURITE!!

Caprese salad is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and sweet basil, seasoned with salt, and olive oil. It is usually arranged on a plate in restaurant practice.
 
Like pizza Margherita, it features the colours of the Italian flag: green, white, and red. Wikipedia

To serve your tomato salad 

I serve as a main dish sometimes with crushed new potatoes and sliced avocado.

We also have it on toast, almost like Bruschetta, simply delicious! I so love lots of different types of tomatoes in this dish!

Or maybe just a large bowl full with bread for a snack,  or as I said – it’s really great at a BBQ or summer party!

So fresh and bursting with flavours. I love a dish that is so vibrant and it’s so good for you to eat all the colours!

Easy delicious salad with creamy mozzarella & sweet tomatoes

Ingredients

  • 450 g 500g Tomatoes make sure they are really tasty ones, I use mixed ones - different colours are nice
  • 1/2 - 1 Red Onion finely chopped
  • Salt & Freshly Ground Black Pepper
  • 1 large Buffalo Mozzarella torn into pieces, roughly
  • Hand-full torn Basil leaves
  • 1 - 2 Tablespoon Olive Oil
  • Heaped dessert spoon Green Pesto
  • Optional - a few sun-dried tomatoes

Instructions

  • Cut your tomatoes into bit sized pieces, I tend to cut cherry ones in half and larger ones into 4-6 pieces - place in a large bowl.
  • (If you are adding sun-dried tomatoes add them now too)
  • Next add the finely chopped red onion together with a sprinkling of salt and plenty of freshly ground black pepper
  • Next add the Olive oil and pesto and stir round
  • Add the torn Mozzarella and torn Basil leaves and just combine using  2 spoons , you don't want it all slimy and green so just minimal mixing
  • Make it look pretty with a few basil leaves on top
