Easy Peasy Tomato & Mozzarella Salad

You know I’ve been trying to decide if this Easy Peasy Tomato & Mozzarella Salad needs to go on here as a recipe? It is the simplest of recipes and just a construction job really. But a couple of peeps kindly pointed out to me – that I should, just so you can print it for a shopping list :-) ‘He-Who-Doesn’t-Cook’ even makes this!!! and that’s saying something! I also think its a really good dish to have when you want to go meat-free for a day or as a side dish at a BBQ or just a lovely lunch… We also have it on toast, simply delicious! I so love lots of different types of tomatoes in this dish!

I serve as a main dish sometimes with crushed new potatoes and sliced avocado – or just a large bowl full with bread for a snack,  or as I said – it’s really great at a BBQ or summer party! So fresh

Ingredients

  • 450g – 500g  Tomatoes, make sure they are really tasty ones, I use mixed ones – different colours are nice
  • 1/2 – 1 Red Onion, finely chopped
  • Salt & Freshly Ground Black Pepper
  • 1 large Buffalo Mozzarella (if you are being really naughty maybe 2), torn into pieces, roughly
  • Handfull torn Basil leaves
  • 1 – 2 Tablespoon Olive Oil
  • Heaped dessert spoon Green Pesto
  • Optional – a few sun-dried tomatoes chucked in – if you like

Preparation Method

  1. Cut your tomatoes into bit sized pieces, I tend to cut cherry ones in half and larger ones into 4-6 pieces – place in a large bowl. (If you are adding sun-dried tomatoes add them now too)
  2. Next add the finely chopped red onion together with a sprinkling of salt and plenty of freshly ground black pepper
  3. Next add the Olive oil and pesto and stir round
  4. Then add the torn Mozzarella and torn Basil leaves and just combine using  2 spoons , you don’t want it all slimy and green so just minimal mixing
  5. Make it look pretty with a few basil leaves on top
  6. And you are all set to go, dig in and enjoy!
