Carole’s Favourite Pasta In The Oven!

The lovely Carole has offered to share one of her family favourite supper dishes and it looks delicious! They love it and have this dish at least twice a month! These sort of suppers are such staples in our bust family lives! So simple, so tasty!

They call it ….’ Favourite Pasta In The Oven!’ It may seem a bit of a faff first time around but it really doesn’t  take long to throw together. It can also be made ahead of time (just needs a little longer on the oven)

Ingredients

Feeds a generous 4 (we often stretch it to five or have left overs for packed lunch)

  • Olive oil
  • 350g dried penne pasta
  • 1 large courgette sliced & then slices halved
  • 1 red pepper (or any colour really) sliced into 1/2 cm strips
  • 1 can chopped tomatoes
  • 150g chorizo sliced into 1/2 cm thin disks & quartered – I have used the thinly sliced chorizo you get in packets too
  • 1 or 2 balls of mozzarella – depending on how cheesy you like it
  • Fresh basil

Preparation Method

Preheat Oven 190C / 375F / Gas 5

18cm x 30 cm oven proof dish

  1. Heat a pan of salted water for the pasta and cook pasta in usual way
  2. When the pasta goes on add a splash of olive oil in a frying pan & gently fry the courgette and pepper until softened and browned
  3. About half way through the pasta cooking time spray some oil in a small pan and add a few torn basil leaves.
  4. When wilted add the tin of chopped tomatoes and heat through.
  5. Drain the pasta when cooked and return to the pan. Mix in the chopped tomatoes, pepper and courgette.
  6. Tip the mixture into the oven proof dish.
  7. Tear up the mozzarella and blob around the top.
  8. Tuck the chorizo in between the cheese
  9. Tear up some more basil leave and dot around to make it look colourful.
  10. Pop it into the oven for 15-20 mins until it is bubbling and the cheese is browned

Eat!

Added a grated clove of garlic and a shake of crushed chillies at the wilting basil stage, and grated cheddar in the absence of mozzarella. Scrummy!

I'm doing a lite version of this tonight with courgetti and substituting half the chorizo for chicken.
